I put together a walk-through for this a few weeks ago:

It's not a production-ready environment, but it's a quick and dirty way to get an externally available GeoServer instance up and running. It uses the base Amazon Linux (barebones CentOS) and includes PostgreSQL with PostGIS, Apache HTTP Server, and Apache Tomcat (and some others).
