Sounds odd. If you are using GS 2.0.2 it might be a memory leak that has
been
fixed in the meantime.
If you are using GS 2.1-RC2 instead see this page:
http://docs.geoserver.org/stable/en/user/production/troubleshooting.html
and try using the jmap command to see where the memory is being
used (jmap -histo:live being the particularly useful one for a quick look)
