The store itself caches the table structure for performance reasons.
You can automate reloading using rest-config if you want.
Alternatively, I guess with some coding it's possible to modify the store
so that a "development mode" flag is present that makes it
not to cache the sql metadata.
It would become quite a bit slower but may be handy if you change
the table structure often.
