After changing the logging settings, cleaning and restating the server in
eclipse, it just worked.

This kind of error can happen only if the GeoServer internal data structures
get into an invalid,
unforeseen state.
In theory it should not be possible, but we have evidence otherwise above.
I suggest you look into the logs for another error before this one, normal
operation should
never lead to the error you've seen.
