Do you mean logging in and out of GeoServer or an external application?
If it's an external application you should look into "rest configuration":
http://docs.geoserver.org/stable/en/user/restconfig/rest-config-api.html
If it's the GeoServer GUI instead... I don't know if it can be done at all,
but these users would be administrators and thus see everything and
the "remember me" cookies would make it hard to tell about an actual
logout.
