To GWC,  EPSG:3857 is the same than EPSG:900913, like in you can seed your
layer using the provided EPSG:900913 gridset and then issue wms requests
with EPSG:3857 and they'll match.

The internal gridsets will prevail as long as you name your gridset
something different. Note the name of the configuration gridset is not
related to the projection/srs name. Those are two separate config options.
You'll confgure your layer to point to a given gridset by the gridset's
name, then wms-c requests will provide a SRS parameter with the gridset's
srs name.
