Alessandro, I don't think you can map individual elements. Geometries are treated as atomic entities. I have consulted another user who reports that "Geoserver has automagically created gml:Curves for linear features".
Why do you want to map individual elements? Please map a geometry and see if app-schema converts it to a gml:Curve for you. Kind regards, Ben.
