Hi Piotr, you have to install the imagemosiac-jdbc geoserver extension.
The documentation is here http://docs.geotools.org/latest/userguide/library/coverage/pgraster.html Be warned, this is not the final version of this geotools plugin, it was developed during the postgis 2.0 beta period.
