Hi,
Udig, gvSIG, Kosmo GIS, and deegree iGeoDesktop are open source Java desktop
GIS programs which support WFS. If you aim at doing sophisticated queries with
spatial filters, have a look at Kosmo and perhaps iGeoDesktop. OpenJUMP WFS
plugin used to be good but it is unmaintained and does not work any more. The
code exists still and it must be mostly OK. Good attribute filters exist also
in gvSIG
