Can you specify what you mean by "handle"?
If you look at the XML returned for a feature type or a coverage you should
see the elements declaring the dimension infos, and you should be able to
change them too.

If so, indeed it's not documented. This is a community, GeoServer is the
results
of the efforts of multiple people, feel free to add a request on
jira.codehaus.org,
and eventually to contribute the missing documentation yourself
