There are no UML diagrams, all developers learned how GeoServer works
by using the source code and a debugger.
We made attempts in the past to make UML diagrams, but they get
out of date quickly and nobody is there to maintain them.
If anybody in the community is eager to make diagrams and maintain them
over time we'd be happy to add them to the developer documentation.
