Ciao Kristina, sorry this fell of my radar for a bit. It looks like GeoServer is not able to write the configuration files inside its own data directory.
Two things: -1- I would remove the default layers from GeoServer -2- it looks like you are using GeoServer with the data_dir left internal to the tomcat webapp dir. I would move the data dir to a different location so that in case you update GeoServer you don't loose it. This way it might also be easier to give the GeoServer process the proper rights and avoide these problems.
