are you using the integrated GWC on an external one?

Moreover how you have defined the gridset?

Did you also enabled the layers to be served against the new gridset?

In order to do a quick test, in the case you are using the integrated GWC
version, just get the preview URL on 3857 and modify the address with
geoserver/gwc/service/wms
something like

http://../geoserver/gwc/service/wms?LAYERS=osm&SRS=EPSG%3A3857&TILED=true...
