Hi,
I have just did a quick look to your JP2 image but it seems to me that it's
not georectified.

>From Gdalinfo:

GCP Projection =
GCP[  0]: Id=1, Info=
          (761.28,367.12) -> (382710,6716808.7255129,0)
GCP[  1]: Id=2, Info=
          (3303.07,2594.78) -> (523280,6599954.5277307,0)

I would suggest a georectification step before serving it through
geoserver. (you may use gdal_warp to do that).
Once done, if you add a proper PRJ too, GeoServer should automatically
properly recognize CRS and envelope.
