WCS 2.0 is part of core in the 2.5.x series, so it is already there.
Unfortunately the exception does not help assessing where the problem is,
it's actually masking it,
something that I've fixed recently:

Long story short, one of the wms/wfs/wcs.xml files in the root directory
fails to load, and due to
the bug in GEOS-6504 the startup sequence fails and the real error is never
written out.
