Andrea is right.
There is support for GeoTiff and WorldImageReader only, which are GeoTools
readers.
ImageMosaic does data access using low level ImageReaders, not the GeoTools
ones, therefore that GeoTiff reader capability isn't used on ImageMosaic
machinery.
There is a JIRA to add support for external overviews on other raster
formats (so ImageMosaic too).
