There should be no significant difference, the single tomcat installation
saves you some disk space
and allows you to share some configuration bits.
The important part is that each GeoServer runs in its own java process.

Or, if you feel like it, you can get most of the benefit with a single
Tomcat installation by using
the marlin rasterizer:

You'll still be somewhat more exposed to software crashes (which can be
mostly solved by having a watchdog) and
there might be other bits of GeoServer that scale less than linearly, but
the big one is, as far as I know, the
Oracle JDK own rasterizer, which marlin replaces.
