Hi Dominique,
removing the geoserver workspace from the GUI won't also remove the
database tables.
You can use the REST interface to perform a coverageStore delete using the
purge parameter. (=metadata).

Alternatively, if you have pgadmin, you can select the table and remove
that from the GUI or, alternatively, run a DROP table SQL query:
