Hi Dominique, removing the geoserver workspace from the GUI won't also remove the database tables. You can use the REST interface to perform a coverageStore delete using the purge parameter. (=metadata). http://docs.geoserver.org/stable/en/user/rest/api/coveragestores.html#rest-api-coveragestores-purge
Alternatively, if you have pgadmin, you can select the table and remove that from the GUI or, alternatively, run a DROP table SQL query: http://www.postgresql.org/docs/9.3/static/sql-droptable.html Hope this helps.
