Helli Pablo, It all depends on what you deleted and where you did that.
If you deleted the geodata from inside the data-directory used by geoserver, than -most likely- geoserver will not be able to help you with the recovery. On the other hand most computers do not shred deleted datafiles, so there are good chances that you can use file recovery options that your operating system offers to successfully retrieve what you have lost. The sooner you attempt that recovery the better. Less chance that a stuff you want to recover has been overwritten by something else.
