If you have two Java installations and if JAI is installed in only one of them, you can setup the JAVA_HOME environment variable to the directory that contains this Java installation.

Otherwise, I'm not aware of anyway (other than modifying the pom.xml files) to setup the boot class path or the extension directory during a Maven build. But I have not searched.
