In practice, GML2 output is stable enough to use for most people, and 
our underlying data is quite stable in terms of db schema changes.

Otherwise the "contract" is that the other open-source clients that we 
recommend actually work with default geoserver output.  Mapbuilder, 
openlayers, ka-map, etc.
