That dependency as far as I can see is just for a test that, today, cannot be
reproduced anyways, since it was using a test database, pre-populated with
data, that is gone (it was available from Refractions).
As far as I can see you just have to remove two files and change the pom:
modules/extension/brewer/src/test/java/org/geotools/brewer/color/PostgisTests.java
modules/extension/brewer/src/test/java/org/geotools/brewer/color/StyleGeneratorOnlineTest.java

I guess the same applies to that ShapefileRenderer demo, I would just
remove it since
that module is unsupported and will be gone for good soon.
