Simone, I have reverted this in 7dfd0fd833a81d419676eae19a31be7c18dc2842 on master to fix the build. DefaultProcessor is still used in gt-process. Although this is an unsupported module, it is included in -Dall builds such as geotools-master on OpenGeo Hudson.
