It isn't clear whether or not the warnings you get are related to the
exception.
There is a version of the spearfish shapefiles at
http://www.geotools.org/display/GEOTOOLS/DB2DataStore which include the
.prj files and should at least eliminate the warnings.
I've had a fair number of problems with creating text symbolizers although
the spearfish demo has worked at times.
