   The error I get in Eclipse is:

java.lang.NoClassDefFoundError: org/opengis/referencing/IdentifiedObject

You also need geoapi.jar

Note: if you want, you could create a Maven 2 project for yours project. You would get only the Geotools JAR you want and all dependencies automatically.

At the bottom of this page, you will see an example of pom.xml files for using Geotools JAR in yours own project.
