We are lazy ;-) We use Java Advanced Imaging and wing off its tiling strategy, also very fun for operations as they can be hardware accelerated. For the specific questions like zoom pyramid and so on you need to look into the specific GIS file formats (not all file formats will support that kind of thing).
Jump I think uses some of our CRS support, Open Jump supports a different feature model (although have been in talks with us about combining forces before, I expect to hear back from them when our revised feature model is available - that address the short commings of both our current approaches).
