That far back you best bet is to read the test cases for example code 
(actually that is always good advice since it
shows you what works).

GeoTools 2.1.1 is a normal java project; drop in the jars (remove the 
extra "epsg" jars) and go ... there is a page in the
user guide showing you how to do this for Eclipse; the same process can 
be used for GeoTools 2.1.1.

If you have a chance try using a newer version; GeoTools 2.2.x even - 
since we would at least be able to help you a little
bit. That said this is open source; if you need to do bug fixes on the 
2.1.x series let us know and we can set you up (after some
paper work) with svn access.... it is just that there are no active 
developers on 2.1.x.
