Did you try an example from the wiki or the new example here... http://geotools.org/examples/imagelab.html I'm hoping it was the old one :) I just tried the Image Lab example app with the earthlights.jpg+world image in the Refractions sample data (see link on the ImageLab page under 'Running the application') and it displayed the file properly. Let us know if that's the one that you're having problems with.
