There is a geoserver tutorial which is based on an image from OpenStreetMap.

http://docs.geoserver.org/stable/en/user/tutorials/imagemosaic-jdbc/imagemosaic-jdbc_tutorial.html

You can omit the steps for geoserver if you want to work with the
geotools API directly. This tutorial stores image data into a jdbc
database.

Look here
http://docs.geoserver.org/stable/en/user/
section Tutorials, for other possibilities.
