My understanding is that the release of uDig is working fine with GeoTiff on 
windows 64. It was using an older version of ImageIO-EXT.

Looking at ImageIO-EXT:

It does not look like Windows64 is available; that project does however have 
source code available and you could ask on their email list about making a 
build.
