Do you mean you have downloaded the jars and loaded them into your
eclipse project ? If so, that's fine, you can still add the
ColorLookupFunction class to your project. You just have to make sure
that the spi file
(META-INF/services/org.opengis.filter.expression.Function) is included
in your project in such a way that it ends up in your compiled jar so
that GeoTools will be able to find the function. I can't help you
with the details of that because I don't use eclipse - but if you
don't already have a META-INF folder, and don't know where to place
it, I'm sure google can help you work it out.
