Are you referring to shapefile creation? Because when we read, I believe we just
read what's there.

Anyways, no, there is no way, a new option for the shapefile store would have 
to be rolled,
to be used by those that want to generate out of standard shapefiles.
We already have other options to control whether to generate timestamp fields 
for example,
that only very few clients would be able to read
