I'm still curious if there's a way to do this but I did find a workaround to
my particular issue.

It seems if the USERNAME property is set in the WFS config (even if its
empty) the client will properly lookup schemas using the configured
httpclient. In the absence of this property it uses some other lookup method
which eventually uses a SimpleHttpClient, in my case failing because of an
authentication proxy in the middle.
