In general using SQL breaks the GeoTools datastore abstraction - so you
should look at the Query class - see
http://docs.geotools.org/latest/tutorials/filter/query.html, this way your
code will be datastore independant. But when you are using PostGIS most of
your queries will be converted to SQL and passed to the DB.
