I have long desired a "client test", probably consists of a very mean server (sorry exactly); and some screen snapshots of what the client should display. Could probably be reduced to a series of WMS- Context documents.
At OGC we've struggled to devise good client tests. Our state of the art is basically what you suggest--tests that present a screen shot of what the server did, then the human has to decide if the picture looks right.

By the way, OGC is migrating to open source compliance testing software along with a documented test scripting language. If anyone is interested in trying it out, more details below. We should have Atom/GeoRSS validation online in a few weeks.
