Assuming they give you the data in a standard format like ESRI
Shapefile, you can use almost any OSGeo application to visualize and
render them.
You don't need to use OSGeo application ;)
You can use Mapnik (http://mapnik.org) to your render maps (see
http://www.openstreetmap.org for an example)
