There's a new book that does a great job explaining the history and
damaging local & global consequences of the "temperate
grain-livestock complex", CAFOs, etc:
Tony Weiss 2007 The Global Food Economy: The Battle for the Future of
Farming ($17.50) ISBN 1-84277-795-5 Zed Books.
I use it as a text in my course on International Political Economy of
Food & Hunger. I'd be happy to share my syllabus with anybody who's
interested.
I also have an overview book chapter on the linkages between
environment, agriculture, food sovereignty and social justice that
many people have found useful in teaching:
