I am in the process of setting up to get my gerbils.
I am starting with one aquarium and would like to expand with tubes. I
don't
want to spend a fortune on habitrail so I am looking at making my own.
I found Poland spring water bottles are perfect. Are they something
that
gerbils can chew through?

If they can get a tooth on it they can chew it. I would not use
the water bottles as they can have very sharp edges when cut,
'firepolishing' the edges is a smelly and dangerous thing,
and they will chew out of there probably within the first few
hours they're in the setup.
My suggestion is to get a larger aquarium.
