Probably the reason you received no replies is that

PS -- gerbils always run away when they get a treat to
eat it in the corner, even if you place the treats in
the center of the tank.  Otherwise another gerbil will
grab it away.

Sorry you've gotten no replies.  I'm a hobby breeder
with an extremely friendly line, so not much
experience here.  But I'll give it a try.

With my "rescue" gerbil Bite-Bite (as the kid's call
him), he'd nip (though not painfully) when I took him
out.  I'd ignore it and take him out several times a
day and let him run on my arms for just a minute or
two and then put him back.  He stopped nipping in
about three days and enjoyed coming out.

A tank is a better setup for taming (my guess) is a
ten gallon tank with a removable screen top.  Take off
the top, take out the nest box and other places to
hide and rest your hand in there.  Let them explore
you.

Move your hand very slowly to corner one and scoop
with two hands and lift him out.  My gerbils are much
more motivated by coming out time than food, but
letting them take sunflower seeds from your palm can
also build a good association.
