I think three tanks each with different bedding and a
bottle and food would be better. The choices made by
the gerbils might be due to textures rather then
fumes/oils emitted? If this set up remains for several
weeks, oils would have evaporated. Bedding would also
get mixed up, as some are transported to other areas
for nesting.
A single tank would not keep smells from each litter
separate.
A survey of age spans of gerbils, mice, and hamsters,
on different litters would be helpful. Provided they
were all fed and watered correctly.
