Encodings.SystemDefault is the default non-Unicode text encoding for the system. Usually, on modern machines, you should probably be using UTF-8 (i.e. Encodings.UTF8) instead, but SystemDefault is useful in such cases as reading in old text files that you know aren't Unicode, and you want to make a reasonable guess as to what they might be.

The system font is specified as "System" wherever you can specify a font. I'm not sure of a quick way to determine what real font that maps to.
