For a desktop icon use the customise option with the Gimp installer.  Normally
un-ticked. see screenshot 1

If it is installing over an older version and it keeps existing setup.  Make
your own, various ways in Windows. Right click on a menu item.

Use Windows Explorer, find the Gimp executable, right click, make  a shortcut
