There isn't a 'git submodule remove' command (though it would make sense to have one). I think when I did this, I removed the submodule lines from the .gitmodules file and then deleted the submodule directory from vendor/plugins. The only oddity was that I was in a partially committed state - I had added info about the submodules to the index, but had not committed.
