I've tried this. Unfortunately the stumbling block for me was installing 
postfix - this requires mysql-libs, and as cPanel has its own version of 
mysqllibs the dependency isn't met.

As I host a large number of sites on the server I don't want to risk any 
potentially hairy installs, so I think I'll have to pass....
