I have completed the first draft on my install guide for Gitorious on OS X 10.6. It is about as long as my Ubuntu guide but does include all the source to all the config files and shell scripts. This could probably be applied to an OS X 10.5 installation but I am sure one would have to update/compile a newer version of Ruby and Rails.
