Hopefully I was able to contact people from one of the swiss glpi deployements 
(haut école specialisée de Suisse occidentale) who had also thought about this. 
They had thought about the possibility of adding some more tables in the 
database by a plugin some plugin. But they dismissed this idea because they 
already had an inventory for others things. 
 
Hopefully (just yesterday) those who wanted this feature at our school, agreed 
that they would use their own inventory solution - and for Beamers and so on, 
we can add them under devices like you said.
 
The haute école also contributed those excellent plugins tree view 
(arboressence) and financial report we will use too. I hope that we will soon 
be part of the glpi users' community, I'm working on the final deployment now.

Hi,

I don't think you can add a category in the inventory menu.
You can customize plenty of parameters and dictionnaries of data.
Perhaps you could create a group of "Devices" ?
