Sorry for a stupid question, but would there be issues using glusterfs
based on several 11 TB ext4-bricks?

Yes XFS is the way to go for large partitions > 16TB (or even 12TB).
XFS is brought back to life by Red Hat. Most of the XFS developers are
now RH employees. We can confidently recommend XFS now.
