Many thanks to Jeff Macdonald, who told me to try replacing "a" with "2" in the sendmail.cf section:
Mesmtp, P=[IPC], F=mDFMuXa, S=EnvFromSMTP/HdrFromSMTP ... Setting F to mDFMuX2 did the trick. Now to wait and see if that makes a difference (not bloody likely IMO).
