Here are the stats for Fedora, http://smolt.fedoraproject.org/stats At the end of the page there is a break-down on locale. Of course there are the cases of users that installed the distro but chose the default locale. Considering that the default desktop environment is GNOME, this should translate in GNOME Desktops. In the case of Ubuntu I do not think there is an explicit process to collect these stats. One could possibly extra such information from accesses for updates, either to security.ubuntu.com (all systems, whichever their locale) or to the localised CC.archive.ubuntu.com, where CC is the country code. In either case, the locale information is not recorded.
