Is there an *extension* from sensors? That is what you want. Perhaps <https://extensions.gnome.org/extension/336/hardware-sensors-indicator/> - or - <https://extensions.gnome.org/extension/82/cpu-temperature-indicator/> applets are gone, dead, salted, burned, and buried in GNOME3.
